Nankhatai - Eggless Indian Cookie


This is my first try to make nan khatai at home. Nan khatai is a kind of eggless Indian cookie made from gramflour, maida and ghee. A perfect accompaniment for tea / strong coffee, though I am not very happy with the look but taste wise it was great !! Need to work on it once again to get that perfect look.


Ingredients


  • All Purpose Flour (Maida): 1 Cup
  • Semolina (Suji): ½ Cup
  • Gram Flour (Besan): ½ Cup
  • Powdered Sugar: 1 Cup
  • Butter: 3/4th Cup
  • Clarified Butter / Ghee: 1/4th Cup
  • Ground Green Cardamom – ½ tsp
  • Cashew - 1 tbsp.




Whisk the butter, Ghee and sugar in a bowl till they mix well. Add flour, suji, gram flour or besan and cardamom powder and mix well.


Use sprinkle of water and make a dough. The dough might feel soggy, so keep refrigerated for 1 hour.


Pre-heat the oven to 200 degree C. Now take small amount of dough, make a round using your hand and put it on a baking sheet. There should be atleast  2 inches gap between the cookie ball. Press the broken cashew nut at the centre of each of the cookie.


Bake for 25 minutes at 180 degree C, till it starts color. Remove from oven and cool over a wire rack. Enjoy with your morning tea.
