Sweet Mango Pickle

This is a traditional pickle made with raw mango, Indian spices and sugar. I have used Whole red chilli to make it hot.You can get a milder version by de-seeding the red chilli before using.


Ingredients


  • Raw Mango - 2 pcs
  • Garlic cloves - 8
  • Sliced Ginger - 1 & 1/2 tbsp
  • Sugar - 5 tbsp ( It may vary based on sourness of mango)
  • Salt - 1 tsp
  • Whole red chilli - 4 ( deseeded and slit into 4-5 pcs)
  • White vinegar - 1 cup
  • Raisin - 1 tbsp
  • Roasted Masala mix - 1 tbsp*
*(Dry-roast equal amount of coriander seed, cumin seed and one whole red chilli and grind it to a fine powder)

Slice the ginger and garlic very thinly.

Cut the mangoes into thick slices and boil them in hot water for 5 minutes. Remove the slices from water and keep them aside.


Put mangoes, sugar, salt, ginger, garlic and red chilli in a frying pan and stir continuously over very low flame.


When the mangoes become mashy, add the white vinegar & raisin and mix well. Adjust the seasoning and remove from heat. Sprinkle roasted masala powder over it and your spicy yummy pickle is ready. Cool it completely and store it in a air tight jar. It can be kept for over a month this way.
