Pat Patar Bora - Jute Leaf Fritters

Pat Shak or Jute leaf, also known as Nalite / Nalte shak in Bengal is quite popular in the farmer's market during this time of the year. It is a very nutritious green leafy vegetable full of dietary fibre. The young, tender leaves are cooked in various ways, like pat shak bhaja, pat pata r dal and the famous Pat pata r bora or jute leaf fritters.


Ingredients

  • Pat Shak / Tender Jute Leaf - a bunch
  • Besan / Gram flour - a cup
  • Salt
  • Turmeric
  • Green Chilli - as per taste, chopped
  • Kalonji Seeds / kalojeere - 1 tsp
  • Oil for frying
Chop the jute leaves, wash them properly and drain the water. Add some salt and mash the greens by hand. Keep for 15 minutes. Now add all the ingredients except oil and make a stiff paste.


Heat oil in a frying pan. Take a dollop of the mixture and add to the pan. Lower the heat and fry on both sides till golden brown.


Serve with your favorite sauce.
