Methi Patar bora-Methi leave fritters

This is the time when vegetable market is flooded with various types of greens and of them, methi leaves makes a prominent presence. We really like the subtle bitter taste of methi leaves and this fritters is a regular in my kitchen. Process is very simple. you need very tender methi leaves with soft branch. Arrange the methi leaf in the form of a fan, dip in batter and then fry till it is crisp. Can have as a snack or serve in pure bengali way, with plain rice, ghee and rock salt.




Ingredients


  • Methi pata - a bunch
  • Flour - 2 tbsp
  • Whole Wheat flour - 1 tbsp
  • Baking powder - a pinch
  • turmeric, salt - as required
  • kalonji / kalojire seeds - a pinch


Make a batter of flour, whole wheat flour, baking powder, salt and turmeric. Batter should not be too thick or too thin, it should be of coating consistency. Add the kalonji seeds.



Heat oil in a frying pan. Now hold the leaves, bunch it the branch in a fan like shape and dip it in the batter. Remove the excess batter and release the bunch in the hot oil.

Fry in medium heat for some time, then increase the temperature and fry till it is brown and crunchy. 



Remove from oil and serve hot with sauce of your choice.
