Vanilla Choco Chip Muffin

Off late I have started getting confidence in baking, and this is my first try to make Vanilla Choco Chip Muffin. I was not very sure about the difference between muffin and cupcake. Became curious and after some googling got the difference to some extent.  What I understand is, muffin is something relatively healthy, not too sweet (which I like the most), texture is usually dry and a bit denser than a regular cupcake. 
Cupcake is on the other hand  miniature cake. They are sweet, comes in many flavors, tender, rich in egg and butter, usually have frosting. I prefer muffin over cupcake when I am having a good cup of tea or coffee. Cupcake qualifies more for a dessert to me. 


Ingredients

Flour - 2 Cups 
Chocolate Chips - 1 Cup 
Baking Powder - 1tsp 
Eggs - 2
Milk - 1/2 Cup 
Butter - 1/4 Cup 
Plain Yogurt - 2 tbsps 
Vanilla Extract 1/2 tsp 
Brown Sugar - 1/2 Cup 
Regular Sugar - 1/2 Cup 

Sieve the flour twice with baking powder.



Coat the chocolate chips with 2-3 tbsp flour.This is to ensure that when you bake, chocolate chip will not go to the bottom of muffin.



Using a hand blender, cream the butter with both kind of sugar. Then add the eggs one at a time and beat lightly so that they mix well. Add the yogurt, milk and vanilla extract.



Slowly add the flour mixture. Fold it well.



Next add the flour coated chocolate chip and fold light handed.


Preheat oven to 180 C. Arrange cupcake liners on a muffin tray. Using an ice-cream scoop. Pour a scoop full mixture to each cup cake liner. 




Now bake it for 20-22 minutes, till a fork comes out clean. Stand in pan for 5 more minutes.



Serve warm with tea or coffee.
