Omelette Curry

Ever saw the omelette curry in any of the restaurant menu? I never did,, however, we as a family really like this dish specially for the dinner.



Ingredients



  • Egg - 3                                     
  • Onion - 2, cut into thin slices
  • Onion Paste - 2 tbsp
  • Ginger Paste - 1 tsp
  • Tomato - 1, chopped
  • Fresh Coriander leaves - a handful
  • Green Chilli - as required
  • Salt, turmeric and sugar - as per taste
  • Bayleaves and whole garam masala - As required







Beat the egg really well with onion slices, coriander leaves, green chilli and salt. Make omelette, cut each into 2 pieces and keep aside.


To make gravy, add oil in a pan. When it is hot, add the bayleaves and whole garam masala. Add the remaining sliced onion and fry.


Add onion paste and ginger paste and fry with a pinch of salt. When the raw smell is gone, add chopped green chilli, turmeric powder and fry. Add chopped tomatoes.


Continue frying till the tomatoes are mashed and oil comes out of the masalas.


Add one cup of hot water and carefully place the omelette slices into the gravy. Add the sugar at this point.


When the gravy is thickened and omelette became soft by absorbing  the liquid, remove from heat. Sprinkle remaining coriander leaves and serve hot with roti.
