Potato Salad




Seasons last baby potatoes are used to make this beautiful salad!! We really loved this!!


Ingredients


  • Baby potato - 10-12, peeled and boiled in salted water
  • Onion 1- Thinly sliced
  • Extra V Olive oil - 1 tbsp
  • Hot water - 1 tbsp
  • Blue cheese dressing, store bought - 1 cup
  • Capsicum and Carrot, jullienned  - 4 tbsp
  • Dried parsley - 2 tsp
  • Chili flakes - 1 tsp


Mix boiled potato with onion, EV Olive oil and hot water.



Mix all the remaining ingredients of dressing.





Add to the potato and stir carefully.



Keep covered and serve cold.

Aloo Dhonepata Posto

Another version of Aloo Posto is here where the posto or poppy seed is ground with a handful of fresh coriander leaves to give a new dimension to the ever popular aloo posto. We prefer to have aloo posto with a bit of gravy, however the traditional aloo posto is a dry dish usually served with rice and kolai dal.






Ingredients:


  • Potatoes - 4, diced
  • Onion - 1, chopped
  • Poppy seeds - 3 tbsp
  • Coriander leaves: a handful
  • Green chillies - as per taste
  • Nigella seeds/kalo jeere: 1/2 tsp
  • Mustard oil: 2 tbsp
  • Salt, turmeric, sugar

Soak the poppy seeds in water. Then make a paste of it along with the coriander leaves and green chillies adding a little bit of water. Set aside.



In a non-stick kadhai, add mustard oil. Once oil heats up add the nigella seeds, and 2 green chillies slit longitudinally. Stir for 45 seconds before adding the potato cubes. Sprinkle some salt and turmeric and cook the potatoes covered on medium heat for 10 minutes. 




In the last 3-4 minutes, add the onions. 



Add the poppy seed-coriander-green chilli paste and coat the potatoes and onions well with that. 



 Add a cup of water. Cook for another 5-7 minutes. In between check seasoning and add salt if required. Add a pinch of sugar to balance the taste.



When potatoes are cooked, remove from heat and add a spoonful of raw mustard oil. This is a very important step to get the authentic taste of aloo posto. 



Serve hot with plain rice.

Aloo Posto

The ever popular classic Bengali vegeterian dish which almost every Bengali just swear by.  The trick to this dish is the timing of adding the 'posto bata' or poppy seed paste to the pan. And the taste of mustard oil that is added at the end also makes it that delicious. The dish could be dry, however, we like the gravy version of it, which is a signature dish of my aunt or 'baramasi'.




Ingredients

  • Potatoes - 3, cubed
  • Poppy seed paste - 3 tbsp
  • Green chilli paste - as required
  • Whole green chilli - 3-4, slit
  • Mustard oil
  • Salt
  • Turmeric







Add mustard oil to a pan. When it is hot, add slit green chilli and cubed potatoes. Add salt and turmeric and fry for 30 seconds.


Add a cup of water and let the potatoes gets cooked. Add some more water if you want your gravy a bit thin.



When potatoes are almost cooked check for seasoning and adjust the salt. Now add the poppy seed paste and green chilli paste mixed with a little water. Stir quickly.



Boil for just 20-30 seconds and remove from heat. Add a spoonful of mustard oil and keep covered for 15 minutes. This is to infuse the flavors of mustard oil into the curry.



Enjoy your aloo posto with plain rice.

Doi diye Aloor Dum - Dum Aloo with Curd

This sweet and Sour, slightly reddish Dum Aloo is an all time hit in my family and I can make it within the blink of an eye if I have boiled potatoes handy. The good part is, every time it is just brilliant. It is a regular in my son's lunchbox and a hit amongst his friends also. 


Ingredients:


  • Baby Potatoes - 250 gms
  • Curd - 100 gms
  • Red chilli powder 1 tsp
  • Hing - a pinch
  • Ghee - 2 tbsp
  • Cumin powder - 1/2 tsp
  • Ginger paste - 1 tsp
  • Poppy seed paste - 1 tsp
  • Salt n sugar as required
  • Green Chili for garnishing

Boil baby potatoes in salted water with the skin on. Mix curd, sugar, red chilli powder, salt, poppy seed paste, ginger paste with a tsp of flour. Heat oil, add boiled potatoes, stir till golden brown. remove from heat.


 In the same oil, add a tsp of ghee and add a pinch of hing. Now add the fried potato, then the curd mixture. 


Mix well, add 2 tbsp of water and let it boil. when gravy thickens, add cumin powder and mix well. Check the seasoning. 


Remove from heat. Garnish with chopped green chilli and serve.
