Fusion Gujiya - Gujiya with Apple Pie Filling

Today is Diwali, we are celebrating the festival of lights with diyas and patakas and of course with sweets. Shops are flooded with sweets and chocolates of different size and shapes, you get gifts in the form of dry fruits and sweets from friends and relatives, some are home made, where you feel the love of your friends and so on. Now when it comes to home made sweets from my part, I am a bit skeptical, since we, as a family, donot have a sweet tooth ( quite unusual as a Bengali though), So, home made goodies has to be extra ordinary, with a kick, may be with a touch of fusion or else the effort will go unnoticed. For this reason, I usually avoid to prepare sweets at home, but this year, I have decided to give it a try and zeroed in to prepare Gujiya.  
Gujiya is quite a well known item in Northern part of India, this is kind of a deep fried pastry in half moon shape usually filled with nuts , coconuts, jaggery and sweet spices. To give it a fusion twist, I have prepared an Apple Pie filling and baked the stuffed pastry instead of deep frying. I am thrilled with the results, the combination of aromatic stuffing and flaky pastry is amazing. And yes, it is well accepted in my family.

Ingredients

For Pastry Dough
  • 2 cups All purpose flour
  • 3/4th cup butter (Salted variety, very cold/frozen and cut into cubes)
  • 2 tablespoon cold Milk
  • 1 tablespoon cinnamon sugar (make your own by mixing 1 tablespoon of icing sugar with 1/2 tsp of cinnamon powder)
  • Milk for brushing the gujiyas on top
For the filling
  • 2 apples 
  • Fat pinch of Cinnamon
  • pinch of Nutmeg
  • 2 tablespoons mixed fruit jam
  • 2 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 1 tsp vanilla essence
  • A knob of butter
  • 2-3 cloves
  • 1 tablespoon corn starch (dissolve it in 1 tablespoon of milk)
To prepare the dough, sieve the flour. Add butter cubes and mix with your finger tips till you get a coarse bread crumb like texture.





Now add 1 tbsp of cold milk at a time to make a dough. Be careful not to add extra milk or else the dough will be soggy. Keep the dough refrigerated for one hour.





To make the apple pie filling, chop the apple. Then add the butter in a pan with two types of sugar. Let the sugar melt., 



Then add the mixed fruit jam and mix well.



Stir occasionally till the apple is cooked and the mixture becomes sticky. Then add the cinnamon and nutmeg. Add vanilla too.



When the spices are incorporated well, add cornflour dissolved in milk and stir quickly. Your filling is ready. Let it cool a bit.



To make the gujiya, take out the pastry dough from refrigerator and divide the dough into 15-16 pieces. Using a rolling pin, flatten each dough into a circle. Use a sharp bowl or cutter to cut a neat disk from the circle. Please a tbsp of filling onto the disc and fold it into half to give your gujiya a half moon shape.



Seal the edges and using a fork, press the edges securely. I have also pricked the filling part to let the steam evaporate.




Prepare all the gujiyas. Preheat the oven at 180 degree C. Place the gujiyas side by side on your baking sheet / tray and brush them generously with milk. 




Sprinkle the cinnamon sugar on top. Then bake them for 20-25 minutes.




When the top of the gujiyas are browned slightly, the baking is done.



Remove from oven and let them cool. Enjoy the happiness with your family and friends.

Dutch Apple Cake

Dutch, the land of tulips,windmills and canals, is also well renowned for its long timeline of historic ethnicity. Within this culture's numerous recipes, I met this one on a boring weekend. And I was quite impressed by the name. "Dutch Apple Cake"-sounds royal, no?

So to break away the monotony i decided to bake the cake right away. Moreover I had plentiful apples and was desperately close to the deadline of the 'a cake a week challenge'. My son  couldn't agree more and so he quickly set everything in order and started then and there. he 'course has got his success in baking from my  side :) . so here is the Traditional Dutch Apple Cake which was delightfully tasty.



Ingredients


  • Eggs -2
  • Caster sugar - 3/4 cup, plus extra for sprinkling
  • Vanilla Essence - 1 tsp
  • Butter - 85 gms
  • Milk - 1/3 cup
  • all purpose flour - 1 Cup
  • Ground cinnamon - 1/2 tsp
  • Baking powder - 2 1/4 tsp 
  • Apples -2, peeled, cored and thinly sliced

Preheat the oven to 200C. Line the sides and base of a square cake tin with parchment paper.
Using a regular whisk, whisk the eggs, caster sugar and vanilla essence in a large bowl until the mixture is thick.
Melt the butter in a saucepan with the milk, cool it a bit and then pour onto the eggs, whisking all the time. 



Sift in the flour, cinnamon and baking powder and fold carefully into the batter so that there are no lumps of flour. 



Pour the mixture into the prepared tin and smooth the surface.



Arrange the apple slices over the batter carefully.



Sprinkle over a tablespoon of sugar at the top.



Bake at 200C in the oven for ten minutes, then reduce the oven temperature to 180C and bake for a further 20–25 minutes or until golden brown. A fork at the centre should come out clean.



Remove the cake from the oven and allow to cool in the tin. Cut into squares and serve with your favorite cuppa.

Apple Walnut Cake

I had a wonderful experience last weekend when we, the Kolkata Food Bloggers' have arranged for a first of it's kind Bake Sale event. There I met a bunch of talents and got the chance to taste their creations, and needless to say, they were super delicious. All the goodies are super soft, fresh from the oven and made with so much love that I am simply bowled out and started feeling guilty for not trying hard to improve upon my baking skill. 
So here is the result of that guilt feeling, my first ever Apple Walnut Cake, and it was like Hoo Hoo.... Though I am not completely happy with the texture, ( it should be a bit less crumbly, a tiny little bit) but it tastes heavenly. Thank you my friends from Kolkata Food Blogger group to give me the courage and assurance that this can be recreated in my humble kitchen.


  

Ingredients


  • Flour - 1 and 1/2 cup
  • Eggs - 2
  • Baking powder - 3/4 tsp
  • Salt - a pinch
  • Nutmeg powder - 1/2 tsp
  • White Sugar - 1/2 Cup
  • Brown Sugar - 1/4 Cup
  • White Oil - 3/4 Cup
  • Vanilla Essence - 1/2 tsp
  • Peeled and Chopped Apples - 2
  • Toasted and Chopped Walnut - 1/2 Cup

Pre-heat the oven to 180 degree C. Prepare a loaf pan smearing oil and placing butter paper. In a bowl, lightly beat the eggs and keep aside. Dry roast the walnuts and chop when cooled.



Combine the flour, nugmeg powder, two types of sugar, baking powder and sugar in a bowl.



 Add oil, eggs and vanilla essence and stir gently until combined.



Fold in the apples and walnut. 




Scrap the batter into the loaf pan and bake until a fork inserted at the centre comes out clean. I have done it for 50 minutes.





Serve warm with your cup of Tea or Coffee.
