A fantastic breakfast idea, when you want to enjoy your Ham and Egg together. I made a batch of these on Sunday, and enjoyed through out the week as an on the go snack. We had it warm as well as cold, it is delicious in both the forms.
Preheat the oven to 200 degree C. Sprinkle drops of oil in a muffin tin. Halve the ham and lay a piece in each hole creating a little ham cup. Add 1 tbsp of chopped onion and cheese. Crack one egg into each hole and sprinkle with salt and pepper. Sprinkle chopped cheese at the top.
Repeat for all and sprinkle some spring onions.
Bake the eggs in preheated oven for about 12 minutes until your desired consistency (I like when the white is firm and the yolk is still nice and runny).

- Thin slices of ham - 5
- Mozzarella cheese - 1/2 cup, shredded
- Onion - 1, sliced finely
- Salt, Black Pepper
