I was not very sure what to expect when I have started cooking this, just tried out this and that, some garlic, a bit of leftover grated ginger, then added one tomato to give it a tangy flavor, and ultimately this dish is born, which is an instant hit in the family.
Soak the brown rice in water for 30 minutes. Heat olive oil in a pan, then add chopped garlic and grated ginger. Stir gently.
Next add the chopped tomato and fry till mashed.
Add the soaked rice and mix thoroughly. Add some hot water and let it cook covered for 15 minutes till rice is half cooked. Brown rice takes time to cook, if it is not done in pressure cooker, so keep an eye to it and add some more hot water, if necessary.
When rice is more than half cooked, add the corn and mix again. Add salt at this point.
Adjust the water depending on the need. When rice is fully cooked and water is completely absorbed, remove from heat and keep covered.
After 10 minutes standing time, fluff the rice gently with a fork. Serve hot with your favorite side dish.
