Carrot, chicken and Sweet Corn Salad

The most important ingredient of a salad is its dressing which provides a different dimension of a otherwise simple salad. Another important point to be remembered is, take freshest ingredients available. This salad can be made very quickly. Just combine all the ingredients, make your dressing and pour it over, though I prefer to have my dressing by the side and enjoy the crunchy chicken and vegetable with just a hint of the dressing.


Ingredients


  • Sweet Corn Kernel - 1/2 Cup  
  • Boiled Potato -1
  • Tomato -1
  • Carrot - 1, chopped finely
  • Capsicum -1
  • Boiled Chicken - Shredded, 1/2 cup
  • Mayonnaise - 2 tbsp
  • Sweet Chilli Sauce - 1 tsp
  • Tabasco Sauce - 3-4 drops
  • Sat and pepper - to taste




Steam the chopped carrot and sweet corn in microwave for 2-3 minutes.


In the mean time, chop the capsicum, boiled potato and tomato and keep aside.


Make your dressing by combining mayonnaise, sweet chilli sauce and Tabasco sauce. Adjust the seasoning.


Combine all ingredients in a salad bowl and add 1-2 tbsp of dressing. mix well. Serve cold with additional dressing by the side.
