Cauliflower Kebab

Let me admit it first, I made these cauliflower kebabs quite accidentally. What happened that day, I was steaming some cauliflower florets to make a vegetable dish, and an old friend called  up after a long time. Naturally I was completely engrossed into that phone call and forgot that poor vegetable on my gas stove. After some time I discovered a pan of boiled cauliflowers which were so soft that if you stick a spoon into it , the spoon completely sinks. :-D Then I decided to make kebabs out of it, (what other option I have except throwing it out? ) and voila,, such a lovely snack!! It is really a melt in the mouth experience and at the same time, it is low carb too !!! 


Ingredients


  • Cauliflower - 1, medium
  • Egg - 1
  • Medium Onion - 2, chopped
  • Coriander leaves - a bunch, chopped
  • Green chilli - 2, chopped finely
  • Flour - 1 tbsp, for binding
  • salt to taste
  • olive oil for frying



Cut the cauliflower into small florets. Place them in a pan of boiling water and then forget to remove it on time. ;-) 
Throw the over boiled cauliflower into the blender for a few seconds. It will become a smooth paste very easily. Now in a large bowl, combine onion slices, salt, green chilli and chopped coriander leaves. Then add the mashed cauliflower and mix it all up.


Add the egg and a spoonful of maida / flour and mix well.


Heat a bit of olive oil in a flat pan. Add a few heaping spoonfuls of the cauliflower mixture and cook over low heat.They're done when both sides are golden brown.


Serve hot with your choice of sauce. Though I had it with plain rice / garam bhat with a spoonful of ghee or clarified butter and a pinch of salt.
