Pav Bhaji

A mixture of various vegetables are boiled, mashed and cooked with a spicy masala and served with butter fried pav. Very simple and quick recipe and ideal for your child's lunchbox.





Ingredients





  • Boiled vegetables of your choice - 1 bowl     
  • Onion - 2
  • Tomatoes - 2
  • Garlic Paste - 1 tbsp
  • Pav Bhaji Masala - 1 tsp
  • Butter - 2 tbsp
  • Fresh Coriander leaves - 1 handful
  • Bread Loaf
  • Oil - 2 tsp




Take different kind of vegetables like cauliflower, potato, Carrot, peas, beans and boil or steam it in little water. Reserve the excess liquid.


In a non stick pan pour the oil and shallow fry sliced onions and garlic paste till soft.





Add chopped tomatoes, Pav bhaji masala, green chilli ( optional) and salt. Roast for 1 minute.'

Add the boiled vegetables and cook for 2-3 minutes. Add 1 tbsp butter and mix well. 




Sprinkle the reserved liquid and continue cooking till the vegetables becomes mashy. Add the chopped coriander leaves and continue frying till all water evaporates.



 Layer the remaining butter on a pav ( bread) and toast it on a hot tawa.



Serve your Pav Bhaji with a hint of lemon juice.
