Chorchori is the mixed vegetable cooked in Bengali way. It's a wonderful dish that can include any vegetables you happen to have around.
Clean the vegetables and pumpkin greens ( kumro shaak) and cut into equal size. Grind the poppy seeds with a pinch of salt and 2 green chillies.
Add 1 tbsp oil in a kadai and fry the bori till golden brown. Remove from heat and keep aside.
Heat remaining mustard oil in a kadai and add panch foron. When it crackles, add the diced vegetables except shaak with a pinch of salt and turmeric and fry for 1 min.
Now add the kumro shaak. It will release lot of water, let it get boiled in its own juices.
When vegetable becomes soft, add the poppy seed paste and mix well.
Add the bori and a pinch of salt, if required. Let it get dry completely. Sprinkle 1/2 tsp of sugar and mix well. Your chorchori is ready to be served.
