Prunes are sweet and juicy dried plums with a number of health benefits. Bought some from a Mall some days back and was thinking of how to use it. Finally mixed it in a plain cake recipe.....
Soften and whisk the butter until it is creamy.
Add sugar and whisk again for a few minutes. Add eggs one at a time beating well after each addition.
Add chopped prunes. Mix sifted flour with baking powder and vanilla essence.
Grease a cake tin with butter. Pour the mixture into the tin with care so that the tin is filled about two third of its height.
Bake ina pre-heated oven at 180 degree C for 35 minutes and then leave it to cool for 10 minutes.
Turn down the tin on to a plate and cool completely. Enjoy with tea or coffee.
